"That said, once I adapted this French recipe from Touche de Sauveurs, itself adapted from a book called Sensations by Conticini, I’ve never bought another packet of commercial puff pastry.

My quantities for the beurre manié — butter and flour combined — are considerably smaller than Conticini’s."
